Starch is a versatile polymer offering a variety of carbohydrate compositions.
In the case of High Fructose Corn Syrups (HFCS) products the controlled hydrolysis of starch polymers results in high fructose compositions with valuable bulk sweetening profiles.

Description High Fructose Corn Syrups (HFCS)*
Sweet, clear, clean-tasting, odorless, liquid sweetener manufactured from corn starch.
Compliance - United States GRAS Affirmation
- 21 CFR 184.1866
Characteristics - HI-SWEET® 42 and HI-SWEET® 55 contain minimum 42% and 55% Fructose (DS basis) respectively along with dextrose and other higher saccharides.
- The DS levels for HI-SWEET® 42 and HI-SWEET® 55 are minimum 70.5% and 76.5% respectively.
| Properties HI-SWEET® 55 exhibits less tendency to crystallize at low temperatures due to its lower dextrose and higher fructose level.
Recommended storage temperature is between 26°C - 32°C 
Applications
- Used as a bulk sweetener and viscosifier in beverages, medicated syrups and suspensions
- HI-SWEET® provides high sweetness and clean mouth feel making it an ideal replacement for sucrose and invert sugar in various applications.
- HI-SWEET® 55 has a higher sweetness and solids content than HI-SWEET® 42, making it more desirable in applications such as beverages and syrups
